PUMPKIN 3 CHEESE PASTA 


Ingredients
1 batch * Vegan Cheese Sauce *
1 batch * Vegan Cheese *
1 batch * Vegan Parmesan *
1 small pumpkin, cut into cubes
9 oz pasta (gf)
salt, pepper to taste
fresh thyme (optional) 


Instructions
1. First you prepare the pumpkin cubes. Put them on a baking sheet prepared with parchment paper and roast them for 15 minutes at 400°F aften coating them in a bit olive or coconut oil. If you prefer oil free baking just skip this. Season with salt and pepper.
2. While the pumpkin is roasting, cook the pasta according to the manufacturer’s direction.
3. When both pasta and pumpkin are ready, warm a casserole and combine the prepared vegan cheese sauce, vegan cheese, vegan Parmesan, and the pasta. Let the mix simmer a bit until warm, serve, and garnish optionally with fresh thyme. Enjoy!
