Mediterranean Stuffed Sweet Potatoes with Sour Cream Tzatziki 


Recipe:
Ingredients
4 large baked sweet potatoes
Chickpeas
Chopped vine ripe tomatoes
Sliced artichoke hearts
Sliced black olives
Chopped red onion
Chopped Parsley
Arugula
For the tzatziki
1 1/2 cup of vegan sour cream
1 cup of shredded cucumber
2 tsp of lemon juice
1 tsp of garlic paste
1 tsp of dill
1/2 tsp of pink Himalayan salt
1/2 tsp of olive oil
1/8 tsp of black pepper  


Directions
1. Spit open baked potatoes and allow to cool for a few minutes. In a large bowl combine equal amounts of chickpeas, tomato, artichoke, olives, and onion. Stir well and finish with parsley.
2. Once potatoes are ready add arugula, followed by filling. Combine all ingredients for sauce into a bowl and add to each potato. Garnish with fresh avocado and enjoy!
